Co-ferment Huehuetenango

Co-ferment Huehue—tropical, winey, not for everyone

Price

From $58 / 200g

Controlled co-ferment micro-lot—sommelier energy, long finish, extremely limited.

Includes a one-page service protocol: when to grind, when to pour, when to stop talking and let the cup speak. Not a crowd-pleaser; a memory-maker.

  • Co-ferment trial
  • Micro lot
  • Sommelier-style service

Provenance & cup

Huehuetenango separation where co-ferment pushes tropical fruit and a winey edge without becoming a science-fair accident. Main-harvest traceability; micro volume means allocation closes fast. We roast for guests who wear blazers to cuppings—structured chaos in a glass.

Sensory & service

Tropical fruit bowl, muscat wine, acidity that zigzags. Body is full; finish is a runway model. Filter-first; milk is a costume change we don’t recommend opening night. We recommend tasting filter-first to map acidity and sweetness before exploring espresso service—our roast is tuned to reward precise brew ratios and filtered water in the 90–110 ppm TDS range.

Care & storage

Store sealed in a cool, dark cabinet; grind within three weeks of opening for peak aromatics. Avoid refrigeration (condensation damages cell structure). For long rests, keep the valve bag closed and away from spice cabinets.

Dispatch & carriage

Roasted to order within the allocation window; ships express with insulated liner in temperate months. Tracking and cupping notes are messaged from concierge. International: duties billed as landed where applicable.

Dialed in nicely after one tweak

I brewed Co-ferment Huehuetenango twice before writing this. First cup was already good; a slightly finer grind made it click. Tropical fruit bowl, muscat wine, acidity that zigzags The finish stayed tidy as it cooled.

Clear cup, easy to serve to guests

Served Co-ferment Huehuetenango to guests over Filter and it was easy to explain in the cup. The notes were readable without feeling forced. I’d reorder this for small dinners.

    Good lot with real personality

Co-ferment Huehuetenango has real character but still behaves predictably. It didn’t need dramatic dialing in, just normal adjustments. Pleasantly surprised by how clean the cup stayed.
