Care & storage
Store sealed in a cool, dark cabinet; grind within three weeks of opening for peak aromatics. Avoid refrigeration (condensation damages cell structure). For long rests, keep the valve bag closed and away from spice cabinets.

I brewed Co-ferment Huehuetenango twice before writing this. First cup was already good; a slightly finer grind made it click. Tropical fruit bowl, muscat wine, acidity that zigzags The finish stayed tidy as it cooled.

Good lot with real personality
