Provenance & cup

Peak-pick Jimma cherry, tank-locked fermentation, then sun on raised beds until the cup tastes like a tropical cocktail without the umbrella. ~1,640–1,920 m; micro-lot volume means when it’s gone, the party’s over. Experimental slot for bars that like a little danger on the menu.

Sensory & service

Mango, rum-raisin, fermented sparkle; body is plush. Acidity is wild—think passionfruit vinegar candy. Finish is long and winey. Not your weekday commuter cup unless your commute is interesting.
