Peak-pick Jimma cherry, tank-locked fermentation, then sun on raised beds until the cup tastes like a tropical cocktail without the umbrella. ~1,640–1,920 m; micro-lot volume means when it’s gone, the party’s over. Experimental slot for bars that like a little danger on the menu.
Sensory & service
Mango, rum-raisin, fermented sparkle; body is plush. Acidity is wild—think passionfruit vinegar candy. Finish is long and winey. Not your weekday commuter cup unless your commute is interesting. We recommend tasting filter-first to map acidity and sweetness before exploring espresso service—our roast is tuned to reward precise brew ratios and filtered water in the 90–110 ppm TDS range.

Care & storage
Store sealed in a cool, dark cabinet; grind within three weeks of opening for peak aromatics. Avoid refrigeration (condensation damages cell structure). For long rests, keep the valve bag closed and away from spice cabinets.
