Smallholders around Yirgacheffe sell cherry to a wet mill we’ve cupped with for years—same altitude band (about 1,950–2,200 m) so every winter release feels like a sequel, not a reboot. Sorting is obsessive; anything that isn’t jasmine-loud gets cut. This is the microlot we pour for people who say they “don’t like acidic coffee” and then finish the cup in three minutes.
